Veggies 2

YAM PUDDING
Amy Gibbons

4-6 med. fresh sweet potatos cooked, drained and mashed (6-8 cups)
Add: 1 t. vanilla, 1 c. sugar, 2 beaten eggs, 1 stick butter, 1 t. cinnamon
Pour into 9x13 casserole
Mix: 1 c. brown sugar, 1/3 c. flour, 1/3 c. butter, 1 c. chopped pecans
Put on top of potatoes and Bake at 350 degrees for 30 min.


BAKED CARROTS
Serves 8
1 1/2 pd. carrots
3/4 t. salt
3 T. light brown sugar
3 T. butter
Slice carrots. Arrange in a heavy casserole with a tight fitting heavy lid. Sprinkle with salt and sugar and dot with butter.
Bake at 325 degrees for about 45 min.
